The Puerto Rican recipe that I am going to make is from the ancient history of Puerto Rico long ago when they first arrived in Puerto Rico. The first thing they saw was pigeon peas with rice and then it became the most famous recipe in Puerto Rico. I am also Puerto Rican and I wanted to actually do something from where I am from. I am going to make a recipe and a very special one that is Arroz con Gandules. so I can learn where I am from and what this recipe might mean to the Puerto Ricans.

Ingredients
1 cup gandule beans
1 lb. lean pork
1 whole onion
6 cloves garlic
Pepper to taste
1 strip pimiento (optional)
1 small can (8 oz.) tomato sauce
3 or 4 stalks green onion
1 small bunch cilantro
2 cans clear chicken broth
2 cups rice, uncooked
Salt to taste
1 Tbsp. achiote seeds
1 Tbsp. Crisco

Directions
1.Bring gandule to boil; drain in colander and set aside.

2.Slice pork into thin, short, narrow strips. Chop onions. Fry pork with onions, pepper and garlic.

3.When almost done, add pimiento strip (optional). Add a can of tomato sauce and allow to simmer uncovered for a few minutes.
Add chopped green onion, cilantro, gandule, broth and uncooked rice and add salt to taste.

4.In a separate pot melt 1 Tbsp. achiote seeds in 1 Tbsp. Crisco. Strain seeds; add colored Crisco to other ingredients. Bring mixture to a boil then lower heat and place foil on top, folding in the edges. Place pot lid on foil. Simmer until rice is dry.
